These almond raspberry tartlets are delicious and they look amazing. They are also very quick and easy to make. The perfect sweet treat for your guests, served as an appetizer or a dessert.
You can buy tartlet shells at your grocery store, which makes the tartlets even easier to make. If you prefer to make homemade shells, you can use my recipe for tart crust and tartlet pans. I used these shortbread tartlet shells:

The recipe for the almond filling is from French pastry chef Eric Kayser. I just added raspberries to make almond raspberry tartlets.
Ingredients
- 16 1.75″ tartlet shells
- 16 Raspberry
- 1 1/2 oz. Almond Flour (35g)
- 1 1/2 oz. softened butter (35g)
- 1 1/2 oz. granulated sugar (35g)
- 1 egg
Servings: tartlets
Instructions
- Preheat oven to 350 degrees Fahrenheit. In a mixing bowl, mix the almond flour, softened butter, granulated sugar and 1 egg, until you get a creamy mixture.
- Pour the creamy mixture into your tartlet shells and add 1 raspberry on top of each shell. Place the tartlets on a baking pan covered with parchment paper.
- Bake for 15 minutes. Enjoy warm or cold.
