This chocolate cake is amazingly healthy! No sugar, no milk, no butter, but instead zucchini! The best part is you can’t even taste the zucchini. It tastes just like regular chocolate cake! So you can be on a diet, and still eat chocolate cake! And, if you have kids, you can get them to eat zucchini without them even noticing it! This recipe is magic! So excited to share it with you!

Ingredients
7 oz. of Bittersweet Baking Chocolate |
1 Zucchini |
2 1/2 oz. grams of All-Purpose Flour (70g) |
3 Eggs |
1/2 oz. of Baking Powder (11g) |
1 Tablespoon of Zero Calorie Sweetener (Stevia |
1 pinch of Salt |
Making the cake
Mommy Tip: if your goal is to get your kids to eat zucchini without them even noticing it, make sure your kids do not see you put the zucchini in the cake. Step 1: Preheat oven to 350 degrees Fahrenheit.
Step 2: Melt the chocolate. (To melt it, you can just put it in the microwave with a tablespoon of water for about 1 minute and 30 seconds).
Step 3: In a bowl, whisk the eggs, and add the tablespoon of sweetener.
Step 4: Peel the zucchini. Shred it with a Grater or a Food Processor.
Step 5: Add the shredded zucchini to the eggs. Mix.
Step 6: Add the melted chocolate. Mix until uniform in consistency.
Step 7: Add the flour, the baking powder, and a pinch of salt. Mix.
Step 8: Pour the mixture in a buttered Cake Pan. Bake for 25 minutes.
Optional: Sprinkle with Unsweetened Shredded Coconut for decoration.
