Delicious Raspberry Financiers

If you vis­it a patis­serie in France, you will prob­a­bly see Financiers, which are lit­tle rec­tan­gu­lar tea cakes. They are sim­i­lar to Madeleines in that you typ­i­cal­ly eat them at sim­i­lar times dur­ing the day (with tea or cof­fee, as a snack or a sweet treat,) but they have an almond taste that Madeleines don’t have. Rasp­ber­ry financiers are total­ly deli­cious, and very easy to make!

You will notice on the pic­ture of my financiers that they are round, and not rec­tan­gu­lar as typ­i­cal in France. That’s because I could not find a financier pan in my local stores, so I had to set­tle for a muf­fin pan! (I lat­er found out you can buy a financier pan on Ama­zon.) But, not too wor­ry, despite being round, my financiers taste exact­ly the same as in France!

I am using a recipe by Jean-François Mal­let (Sim­plis­sime Desserts).

Rasp­ber­ry Financiers
Deli­cious lit­tle cakes with an almond fla­vor and rasp­ber­ry.

Instruc­tions
  1. Pre­heat oven to 390 degrees Fahren­heit.
  2. Melt the but­ter until it becomes brown in col­or.

  3. Mix the all pur­pose flour, sug­ar, almond flour, and egg whites. Add the melt­ed but­ter, and mix again until well-blend­ed.

  4. Pour the dough into the cav­i­ties of the pan (make sure you but­ter them first to pre­vent the financiers from stick­ing to the pan.) Add the rasp­ber­ries.

  5. Bake in the oven for 15–20 min­utes.
  6. Let the Financiers cool down. Sprin­kle with gran­u­lat­ed sug­ar, and eat cold. Enjoy!
