This is a VERY easy tomato and sausage bake recipe. Perfect for when you don’t want to spend much time cooking, and need a meal that everyone, including kids, will love to eat!
This quick and easy recipe is from my favorite cookbook Simplissime by French chef Jean-Francois Mallet. This book contains lots of quick and easy recipes, and they are all delicious! I have the French version, but it has now been translated into English. If you are interested, you can purchase the English version here:
For 4 people:
20 oz. Red and Orange Cherry Tomatoes (essentially 2 small packs)
4 Sausages (or 8 small ones)
2 branches of Fresh Rosemary
Mallet’s recipe is for Merguez Sausage. Merguez is a spicy sausage that is very popular in France. I could not find any Merguez in any of my local grocery stores in the US. However, this recipe is delicious with any type of sausage so any sausage you want to buy will be fine. If you nevertheless want to try the recipe with Merguez, you can purchase Merguez on Amazon (see link at bottom of page).
Baking the tomatoes and sausages
Preheat oven to 340 degrees Fahrenheit.
Cut the cherry tomatoes in halves.
Put the sausages in a Baking Dish , and bake them for 10 minutes.
Add the tomatoes. Bake sausages and tomatoes for another 10 minutes.
Add the fresh rosemary.
That is it! So easy! Now enjoy a delicious meal!
