Strawberry tart is a classic French dessert, and it is so delicious! There are many different fillings, the most common being the classic pastry cream (see my recipe here), but sometimes it’s fun to try something new, like a lemon curd filling! I Strawberries and lemon are delicious together, and make for a fun delicious lemon strawberry tart!
Recipe
The lemon strawberry tart requires a tart crust. You can either make your own (see recipe for the French “pâte brisée” here) or buy a sweet pie crust at the store.
Because the lemon curd needs to sit in the fridge for a couple of hours before you can use it, it is a good idea to prepare the lemon curd the day before.
- 1 sweet tart/pie crust (homemade or store bought)
- 2 lemons (juice + zest)
- 3 oz. unsalted butter (80g)
- 7 oz. granulated sugar (200g)
- 2 eggs
- 1 lb fresh strawberries
- Preheat oven to 350 degrees Fahrenheit.
- First, bake your homemade or store-bought tart/pie crust for 15 minutes in the oven. Take it out of the oven, and set aside to cool down.
- Next, prepare the lemon curd. Step 1: In the microwave, melt the butter together with the sugar and the juice + zest of 2 lemons.
- Step 2: Add 2 eggs. Pour the mixture in a pot, and cook on the stove on low heat for about 20 minutes, stirring from time to time. It is ready when the mixture becomes creamy (see picture).
- Place the lemon curd in the fridge for a couple of hours.
- Pour the lemon curd into your crust. Even it out with a spatula.
- Slice the strawberries in thin slices and place them on top of the lemon filling. Voilà! Enjoy cold.
