Lemon Strawberry Tart

Straw­ber­ry tart is a clas­sic French dessert, and it is so deli­cious! There are many dif­fer­ent fill­ings, the most com­mon being the clas­sic pas­try cream (see my recipe here), but some­times it’s fun to try some­thing new, like a lemon curd fill­ing! I Straw­ber­ries and lemon are deli­cious togeth­er, and make for a fun deli­cious lemon straw­ber­ry tart!

Recipe

The lemon straw­ber­ry tart requires a tart crust. You can either make your own (see recipe for the French “pâte brisée” here) or buy a sweet pie crust at the store.

Because the lemon curd needs to sit in the fridge for a cou­ple of hours before you can use it, it is a good idea to pre­pare the lemon curd the day before.

Instruc­tions
  1. Pre­heat oven to 350 degrees Fahren­heit.
  2. First, bake your home­made or store-bought tart/pie crust for 15 min­utes in the oven. Take it out of the oven, and set aside to cool down.
  3. Next, pre­pare the lemon curd. Step 1: In the microwave, melt the but­ter togeth­er with the sug­ar and the juice + zest of 2 lemons.

  4. Step 2: Add 2 eggs. Pour the mix­ture in a pot, and cook on the stove on low heat for about 20 min­utes, stir­ring from time to time. It is ready when the mix­ture becomes creamy (see pic­ture).

  5. Place the lemon curd in the fridge for a cou­ple of hours.
  6. Pour the lemon curd into your crust. Even it out with a spat­u­la.

  7. Slice the straw­ber­ries in thin slices and place them on top of the lemon fill­ing. Voilà! Enjoy cold.
