For 2 people:
|250 grams White Mushroom|
|1/2 Red Pepper|
|1/2 Yellow Pepper|
|1 Tablespoon of Fresh Parsley cut in little pieces|
|6 Green Olives (marinated in olive oil if you can find it)|
|1 Garlic Clove|
|The juice of 1/2 Lemon|
|3 Tablespoons of Olive Oil|
|1 Pinch of Salt|
|1 Pinch of Pepper|
Making the Salad
Step 1: Slice the mushrooms (unless you bought already sliced mushrooms). Squeeze the juice of 1/2 lemon over the mushrooms.
Step 2: Cut the red pepper and the yellow pepper into cubes. Grill them in a skillet on medium heat, with a little bit of olive oil.
Step 3: In a small bowl, mix the olive oil, the salt, the pepper, and the crushed garlic clove (if you can’t crush the garlic clove, just cut it in little pieces). This is your salad dressing.
Step 4: In a salad bowl, mix the mushrooms and the red and yellow peppers. Add the dressing, the parsley cut in little pieces, and the green olives. Mix and Enjoy!
Keep refrigerated until ready to eat.
