Light and Healthy Mushroom Salad

Are you tired of your every­day sal­ad? Look­ing for some­thing new, light and healthy? This deli­cious Mush­room Sal­ad is for you!

This deli­cious sal­ad recipe is from a fel­low French blog­ger. You can find it in French here.


For 2 peo­ple:

250 grams White Mush­room
1/2 Red Pep­per
1/2 Yel­low Pep­per
1 Table­spoon of Fresh Pars­ley cut in lit­tle pieces
6 Green Olives (mar­i­nat­ed in olive oil if you can find it)
1 Gar­lic Clove
The juice of 1/2 Lemon
3 Table­spoons of Olive Oil
1 Pinch of Salt
1 Pinch of Pep­per

Making the Salad

Step 1: Slice the mush­rooms (unless you bought already sliced mush­rooms). Squeeze the juice of 1/2 lemon over the mush­rooms.

Step 2: Cut the red pep­per and the yel­low pep­per into cubes. Grill them in a skil­let on medi­um heat, with a lit­tle bit of olive oil.

Step 3: In a small bowl, mix the olive oil, the salt, the pep­per, and the crushed gar­lic clove (if you can’t crush the gar­lic clove, just cut it in lit­tle pieces). This is your sal­ad dress­ing.

Step 4: In a sal­ad bowl, mix the mush­rooms and the red and yel­low pep­pers. Add the dress­ing, the pars­ley cut in lit­tle pieces, and the green olives. Mix and Enjoy!
