Clafoutis is a baked French dessert of fresh fruits, covered with a flan-like-batter. A friend of mine mentioned that her favorite French dessert was plum almond clafoutis, so I decided to make one. Plum Almond Clafoutis is a wonderful way to enjoy fresh plums. The sweetness of the almond flour softens the slight acidity of plums, which makes for a delicious combination of flavors.
Utensils
Clafoutis is a very easy dessert to make, that does not require a lot of utensils. All you really need is a shallow baking dish.
Recipe
Ingredients
- 4 plums
- 1 cup whipping cream
- 3 1/2 oz. granulated sugar
- 2 oz. almond flour
- 1/2 oz. all purpose flour
- 2 eggs
- 2 egg yolks
- 1 tbsp sliced almonds

Instructions
- Preheat oven to 350 degrees Fahrenheit. Rinse the plums. Cut them in half and remove the pits. Turn them around (skin up), and slice thin slices. (See picture).
- In a mixing bowl, mix the eggs, egg yolks, almond flour, all purpose flour, and sugar, until you have a smooth texture. Add the cream, and mix again.
- In a shallow baking dish, place the plum slices. Pour the batter over the plums. Sprinkle with sliced almonds.
- Bake for 45 minutes. Let it cool down. Enjoy lukewarm or cold. (I personally like it best cold!).
