  1. Cut off the stem. Rinse the arti­choke in run­ning cold water. Place the arti­choke in the food steam­er and steam it for 45 min­utes.
  2. In a small bowl, mix the olive oil, the vine­gar and the mus­tard.
  3. Eat the arti­choke hot. Pull off the out­er leaves, one at a time. Dip the white fleshy end in the vinai­grette. Place dipped end in your mouth, and pull through your teeth to remove fleshy end (which is the part that you eat). Dis­card the rest of the leaf. Con­tin­ue until all the leaves are removed. When you get to the inner leaves with the pur­ple tips, you can remove them all at once. With a knife, scrape out the ined­i­ble fuzzy part cov­er­ing the heart. Cut the heart into pieces, dip in the vinai­grette, and enjoy!
