Eat the artichoke hot. Pull off the outer leaves, one at a time. Dip the white fleshy end in the vinaigrette. Place dipped end in your mouth, and pull through your teeth to remove fleshy end (which is the part that you eat). Discard the rest of the leaf. Continue until all the leaves are removed. When you get to the inner leaves with the purple tips, you can remove them all at once. With a knife, scrape out the inedible fuzzy part covering the heart. Cut the heart into pieces, dip in the vinaigrette, and enjoy!
