Goat Cheese Salad (au chêvre chaud)

Goat cheese sal­ad is a sta­ple of Parisian cafés. It is one of these every­day sal­ads that you find every­where. Though there are some vari­a­tions on what the sal­ad con­tains, all goat cheese sal­ads include warm goat cheese, usu­al­ly on toast­ed bread. It is the com­bi­na­tion of fresh cold greens with warm goat cheese that makes this sal­ad a real­ly spe­cial treat.

My Goat Cheese Salad Recipe

Though you can use any toast­ed bread, I pre­fer using slices of fresh baguette. I par­tic­u­lar­ly like Trad­er Joe’s baguette. I also make my own home­made French baguette (recipe here- if you are gluten-free, I have a gluten-free recipe here).

Instruc­tions
  1. Pre­heat the oven to broil. Cut 3 slices of baguette. Spread goat cheese on each slice, and add a drop of olive oil on the cheese. Sprin­kle with herbes de provence. Place the baguette slices on a bak­ing pan cov­ered with parch­ment paper.

  2. While you are wait­ing for the oven to warm up, place the arugu­la on a plate with the cher­ry toma­toes, the wal­nuts, and the basil leaves cut in small pieces.
  3. Pre­pare the dress­ing. I a small bowl, mix one table­spoon olive oil with 1/2 table­spoon of bal­sam­ic vine­gar. Driz­zle on the sal­ad (or keep the dress­ing on the side if you pre­fer).
  4. Place the baguette slices in the oven on broil for 2–3 min­utes (keep an eye on it to ensure it does not burn).
  5. Place the slices of warm goat cheese on the sal­ad. Eat imme­di­ate­ly while the goat cheese is still warm. Enjoy!
