Mix all the ingredients for the cookie dough. You can mix the old fashioned way using the tip of your fingers, or go for the fast route and use a stand up mixer.
Gather the dough in a ball and wrap it with plastic wrap. Let it sit at room temperature for 30 minutes.
Preheat oven to 350 degrees Fahrenheit.
Place parchment paper on a baking tray. With the cookie dough, make hedgehog shapes, i.e. shapes that look like pears or ice cream cones. See picture. You should have enough dough to make 18 hedgehog bodies.
Bake the cookies for 25 minutes. Set aside and let the cookies cool down.
Once the cookies are no longer warm, proceed to decorate them. First, melt the chocolate. The easy way to melt the chocolate is to put it in the microwave for about 1 minute with a tablespoon of water.
With a pastry brush, apply the warm melted chocolate on the round part of the hedgehog bodies. See picture. Sprinkle with chocolate sprinkles. The sprinkles will stick on the warm chocolate.
Take your black decorating gel to make the eyes of the hedgehog. Place a little bit of the gel on the tip of the hedgehog muzzle to stick a pearl and make the nose. See picture.
Let the chocolate decoration cool down. Enjoy the cookies cold.
