Instruc­tions
  1. Pre­heat oven to 350 degrees Fahren­heit.
  2. In a mix­ing bowl, mix the but­ter (but­ter should be soft­ened and slight­ly melt­ed, but not warm) with the gran­u­lat­ed sug­ar.
  3. Add the egg, the almond flour and the all pur­pose flour. Mix.
  4. Add the maple syrup and mix again. Gath­er the dough in a ball.
  5. With a rolling pin, spread the dough into a flat rec­tan­gle. (Tip: put a lit­tle flour on the rolling pin and on the ball of dough, so the dough does not stick to the rolling pin.)
  6. Cut your cook­ies in the dough using a cook­ie cut­ter of your choice. (if you do not have a cook­ie cut­ter, you can use a knife to cre­ate a cook­ie design).
  7. Place cook­ies on parch­ment paper on a bak­ing tray.
  8. Bake for 20 min­utes.
  9. Enjoy warm or cold. Option­al: sprin­kle with con­fec­tion­ers sug­ar for the yum­mi­est cook­ies.
