Healthy and delicious, the Nicoise Salad is a speciality from the city of Nice, on the French Riviera. Hence the name nicoise (meaning “from Nice”, actually spelled “niçoise” in French). This salad comes in different variations. At a minimum, it contains tuna and/or anchovies, tomatoes, olives, hard-boiled eggs, and olive oil in the dressing. It makes for a full meal, that is light, refreshing and healthy!
Recipe
This is my own easy recipe. I am not a fan of anchovies, so I only have tuna in my salad. Feel free to add anchovies, if you wish.

- 1 small can tuna
- 3 hard-boiled eggs
- 10 cherry tomatoes
- 10 pitted black olives
- 1 green bell pepper
- 1/2 bag mixed greens lettuce
- 4 leaves fresh basil
- 3 tablespoons olive oil
- 1 tablespoon wine vinegar
- 1/2 tablespoon yellow mustard

- If you didn’t buy already hard-boiled eggs, boil your eggs. Cut the green pepper in thin stripes (remove the seeds). On a plate, place mixed greens lettuce, the stripes of green peppers, black olives and tomatoes. Add a few leaves of cut basil. Top the middle part of your salad with the tuna cut in pieces. Cut your hard-boiled eggs in halves, and place the halves around the salad.
- Prepare the dressing. In a small bowl, mix the olive oil, vinegar and mustard. Drizzle the dressing on the salad, or serve the dressing on the side. Enjoy!
