Healthy and deli­cious, the Nicoise Sal­ad is a spe­cial­i­ty from the city of Nice, on the French Riv­iera. Hence the name nicoise (mean­ing “from Nice”, actu­al­ly spelled “niçoise” in French). This sal­ad comes in dif­fer­ent vari­a­tions. At a min­i­mum, it con­tains tuna and/or anchovies, toma­toes, olives, hard-boiled eggs, and olive oil in the dress­ing. It makes for a full meal, that is light, refresh­ing and healthy!

Recipe

This is my own easy recipe. I am not a fan of anchovies, so I only have tuna in my sal­ad. Feel free to add anchovies, if you wish.

Instruc­tions
  1. If you didn’t buy already hard-boiled eggs, boil your eggs. Cut the green pep­per in thin stripes (remove the seeds). On a plate, place mixed greens let­tuce, the stripes of green pep­pers, black olives and toma­toes. Add a few leaves of cut basil. Top the mid­dle part of your sal­ad with the tuna cut in pieces. Cut your hard-boiled eggs in halves, and place the halves around the sal­ad.

  2. Pre­pare the dress­ing. In a small bowl, mix the olive oil, vine­gar and mus­tard. Driz­zle the dress­ing on the sal­ad, or serve the dress­ing on the side. Enjoy!
