  1. Pre­heat oven to 280 degrees Fahren­heit. Bake about 4 pinch­es of minced onion and 2 pinch­es of gar­lic in your bak­ing dish for about 10 min­utes. In the mean­time, slice your veg­eta­bles. Try to make slices of the same thick­ness for all veg­eta­bles.
  2. Place the slices of veg­eta­bles over the minced onion and gar­lic, alter­nat­ing the veg­eta­bles in this order: egg­plant, toma­to, zuc­chi­ni, toma­to, egg­plant, toma­to, and so on. Pour olive oil all over the veg­eta­bles. Sea­son with herbes de Provence, salt, pep­per, and anoth­er pinch of minced gar­lic.
  3. Bake in oven for 2 hours. Enjoy!
