I love this salmon avocado appetizer. Only takes about 5 minutes of very easy preparation. It is light, fresh, and looks pretty. It is also quite versatile: if you don’t want to put the smoked almond mix in an avocado, you can put it on little toasts with cream cheese to make canapés, for example. This appetizer is sure to impress your guests!
This is a recipe from my favorite French “Simplissime” cookbook by Jean-François Mallet (also available in English under he name “Simple”, if you are interested).
Salmon Avocado Appetizer
Dice the smoked salmon, and mix it with the dill, the chives, the juice of the lime, and the olive oil.
(season with salt and pepper if you would like- I skipped this step, as smoked salmon already contains salt)
Cut the avocado lengthwise in two halves to expose the pit. Remove the pit, and fill the space that was previously occupied by the pit with the smoked salmon mix. Eat immediately. Enjoy!
