Spinach quiche is very easy to make, and is a wonderful way to get your family to eat spinach. My 6 year-old loves this quiche! A great, easy, family dinner recipe!
I like to put goat cheese in my spinach quiche as I find spinach goes particularly well with goat cheese. If you do not like goat cheese, the recipe will work with any other cheese of your choosing.
Please note, you will need a quiche pan.
Though I usually make my quiches using a sugarless pâte brisée, which is the traditional way to make quiche, I used puff pastry for this quiche for a quick and easy family dinner.
First, cook the spinach in boiling water on the stove for 10 minutes. Drain, making sure you remove as much water as possible.
Preheat oven to 410 degrees Fahrenheit.
In a skillet, sauté the spinach with a pinch of minced onion or garlic. (I chose onion, as my kids don’t like garlic.) This only takes 2 minutes or so.
In a mixing bowl, mix the eggs with the milk and whipping cream. Season with nutmeg, salt and pepper. Cut the goat cheese in small pieces, add it, and mix again.
Roll out your puff pastry to fit your quiche pan (you may want to cover your pan with parchment paper). Make little holes on the pastry using a fork (see picture).
Pour your spinach mixture on your puff pastry. (Note, if your quiche pan is small, you might not need all the mixture.)
Bake in oven for about 45 minutes. Enjoy warm.
