I love this salmon avocado appetizer. Only takes about 5 minutes of very easy preparation. It is light, fresh, and looks pretty. It is also quite versatile. If you don’t want to put the smoked salmon mix in an avocado, you can put it on little toasts with cream cheese to make canapés. This appetizer is sure to impress your guests!
Salmon Avocado Recipe
This is a recipe from my favorite French “Simplissime” cookbook by Jean-François Mallet (also available in English under he name “Simple”, if you are interested).
Ingredients
- 4 avocadoes
- 4 slices smoked salmon
- 4 branches fresh dill
- 1 tablespoon minced chives
- 2 lime
- 4 tablespoons olive oil
Servings: people
Instructions
- Dice the smoked salmon, and mix it with the dill, the chives, the juice of the lime, and the olive oil. (season with salt and pepper if you would like- I skipped this step, as smoked salmon already contains salt)
- Cut the avocado lengthwise in two halves to expose the pit. Remove the pit, and fill the space with the smoked salmon mix. Eat immediately. Enjoy!
