Shredded Carrot Salad

Shred­ded Car­rot Sal­ad is a sta­ple of French every­day food. Quick and easy to make, it is also incred­i­bly healthy. Dress­ings vary, but usu­al­ly include oil and/or vine­gar with a vari­ety of herbs and spices. I recent­ly dis­cov­ered that adding orange juice makes for a deli­cious dress­ing! My dress­ing is thus a mix­ture of orange juice, olive oil, lemon juice and nut­meg. And I also add fresh basil. Deli­cious­ly fresh, and healthy!

Recipe

You will of course need to shred the car­rots. For this, you will need a food proces­sor. How­ev­er, if you do not have one, don’t wor­ry! Some stores, like Trad­er Joe’s, sell bags of already shred­ded car­rots!

Instruc­tions
  1. Peel the car­rots and shred them using your food proces­sor. (If you bought already shred­ded car­rots, skip this step).
  2. Pre­pare the dress­ing. In a small bowl, mix the olive oil and the lemon juice. Squeeze half an orange over your bowl to release the orange juice onto the bowl. Mix. Sprin­kle nut­meg, salt, and pep­per. Mix, and dress your sal­ad (or serve the dress­ing on the side, if you pre­fer).

  3. Cut leaves of fresh basil into small pieces, and add to sal­ad. Enjoy!
