Shredded Carrot Salad is a staple of French everyday food. Quick and easy to make, it is also incredibly healthy. Dressings vary, but usually include oil and/or vinegar with a variety of herbs and spices. I recently discovered that adding orange juice makes for a delicious dressing! My dressing is thus a mixture of orange juice, olive oil, lemon juice and nutmeg. And I also add fresh basil. Deliciously fresh, and healthy!
You will of course need to shred the carrots. For this, you will need a food processor. However, if you do not have one, don’t worry! Some stores, like Trader Joe’s, sell bags of already shredded carrots!
Peel the carrots and shred them using your food processor. (If you bought already shredded carrots, skip this step).
Prepare the dressing. In a small bowl, mix the olive oil and the lemon juice. Squeeze half an orange over your bowl to release the orange juice onto the bowl. Mix. Sprinkle nutmeg, salt, and pepper. Mix, and dress your salad (or serve the dressing on the side, if you prefer).
Cut leaves of fresh basil into small pieces, and add to salad. Enjoy!
